Hunting season came to an end and now it is the cool off period. Things have been crazy and depressing packing all the hunting gear away until next season. Fishing season is near and those few extra pounds we put on are still hanging in there. It?s time to start eating healthier and getting into top shape to scout the woods. What a better way to start off by eating a meal that makes your taste buds scream for more and your health thanking you for eating healthy. It is a simple meal that you can make within 30 minutes. Great to eat in front of a raring fire. Southern-Style Shrimp over Rice Ingredients: 6 cups~ Cooked White Rice 1/2 cup~ Butter 1/2 cup~ Celery (chopped) 1/2 cup~ Green Bell Pepper (chopped) 1/2 cup~ Onion (chopped) 4 cloves~ Garlic(chopped) 1/2 cup~ All-Purpose Flour 1 can (12 oz)~ Evaporated Milk 1/2 cup~ Water 3 tablespoons~ Tomato Paste 1 pound~ Shrimp (cooked, peeled, and divined) 1/2 cup~ Parsley (chopped) 1/2 teaspoon~ Old Bay Seasoning 1/2 teaspoon~ Salt In a large sauce pan melt the butter over medium heat. Add celery, green bell pepper, onion, and garlic. Cook for 5 minutes stirring occasionally until vegetables are tender. Stir in flour. Gradually add the evaporated milk, water, and tomato paste. Stir constantly, until mixture comes to a boil. Cook an additional 1 to 2 minutes or until mixture slightly thickens. Stir in shrimp, parsley, Old Bay seasoning, and salt. Cook for another 5 minutes or until thoroughly heated. Serve over White Rice |
