Hunting season is almost coming to an end. Hunting finishes at sundown on Saturday 2/10 and Valentine?s Day is only 4 days later. That does not leave you much time to shop and plan. This recipe is a great idea for a romantic meal by candle light at home. This will makeup for not being home the past 6 months.

Venison Parmesan


Ingredients:
2 pounds ~ Venison steak or chops, cut thick
Adobo Tenderizer
1 cup~ Flour
Seasoning (recommend Mrs. Dash~ Tomato blend)
2~ Eggs beaten
1 cup~ Seasoned bread crumbs
3 cups~ Grated Parmesan cheese
2 cups~ Diced tomatoes
2 cups~ Tomato sauce
? cup~ Minced onion
3-4 cloves~ Minced garlic
1 teaspoon~ Oregano
1 teaspoon~ Basil
1 pound~ Mozzarella cheese
Olive Oil

Pre heat the over at 350 degrees.

Clean and trim venison. Sprinkle with Adobo tenderizer and tenderize with a meat hammer. In a container put the flour and season it with Mrs. Dash (use as much or as little as your taste buds can handle). In another container put the beaten eggs in, and in the last container mix bread crumbs with one cup of parmesan cheese. Take each piece of venison and dredge it in the flour first then the eggs and lastly into the bread crumbs. Layer the venison in a container and place it in the refrigerator to give the venison time to absorb the seasoning and stiffen a tad.
While the venison is in the refrigerator grab a pot. In the pot put olive oil, minced onion, and garlic. Saut? until lightly brown then add the diced tomatoes, tomato sauce, oregano, basil, 1 cup parmesan cheese. Keep on low flame.
Take the venison out of the refrigerator. In a pan put olive oil and cook the venison on the stove. Roughly 3-4 minutes on each side, long enough to brown each side. As the pieces are done place them in a baking dish single layered. Cover the venison with the mozzarella cheese then put the sauce that is simmering over it. Finish it off with the rest of the parmesan cheese.
Bake in the oven for 30 minutes.

Tastes great over pasta and a side of garlic bread. Best to drink with this would be red vine.

Helpful Hint~ If your tomato sauce is a little to salty or watery take a peeled uncooked potato and drop it into the sauce. The potato with absorb the excess salt and water.

Note~ If you don?t want to make your own sauce you can substitute it with your favorite canned tomato sauce.
